The grapes for this wine are harvested from vines with an average age of about 35 years.
The vinification involves the use of 100% whole clusters and natural yeast, which promotes an authentic expression of the terroir.
The wine is aged for 15 months in oak barrels, 50% of which are new, followed by 2 months in steel tanks to preserve freshness. No fining or filtering takes place before bottling.
